Apple Puff Pancakes from Sweet Biscuit Inn

Apple Puff Pancakes

Ingredients:

  1. 2 medium tart apples chunked

  2. 1 cup milk

  3. 1 cup all-purpose flour

  4. 2 TBS brown sugar

  5. 1 tsp cinnamon

  6. 4 eggs

  7. melted butter to coat dishes

  8. powdered sugar for dusting

  9. blueberries for topping


Directions

  1. Preheat over to 400 ̊

  2. Prepare the batter by mixing milk, flour, and eggs together in a mixing bowl

  3. Coat low and wide 5 oz ramekins with melted butter

  4. Sprinkle equal parts brown sugar in the bottom of each ramekin

  5. Add equal parts apple chunks to each ramekin

  6. Sprinkle tops with equal parts cinnamon

  7. Fill each ramekin 3/4 full with batter

  8. Place on cook sheet and bake for 20-25 minutes (until pancake puffs)

  9. Remove pancake from ramekin, top with blueberries and powdered sugar
